Chicken & Pasta
Super easy

Pasta is a staple in many homes and served almost weekly so having a few variations to keep things interesting is a great idea. This recipe is a great base as it can be tweaked endlessly to suit your cravings or what you have on hand.

Precooked (leftover) chicken is used in this version, you can substitute with shrimp, lobster, pulled pork, turkey meat, ground beef/chicken/turkey. You can use a roast but it works best with something cooked low and slow like pepperoncini beef, or barbacoa beef.

Ingredients

  • 400 g Pasta (Penne or Rotini work best)
  • 3 cloves Garlic, minced
  • 1 Onion halved and sliced
  • 1 package Baby spinach (washed)
  • 2 cups Chicken (cooked and shredded)
  • 0.5 cups White wine (dry)
  • Salt and Pepper
  • Red pepper flakes

Chicken & Pasta Directions

  1. Cook your pasta as per the directions. Before draining reserve 1/2 - 1 cup of the liquid.
  2. Place onions in a large preheated skillet, sprinkle with salt and saute the onions until browned
  3. Add the garlic and mix until the garlic is fragrant.
  4. Put your cooked and shredded chicken in the pan with the onions and stir to combine.
  5. Once the chicken has heated through and starts to get some color add the tomatoes, season with salt/pepper and mix to combine.
  6. As the tomatoes start to let their juices go stir in the wine, let this simmer and reduce by half.
  7. Add the spinach, reduce the heat to med-low and cover. Let it stand for 3-4 minutes.
  8. Remove the lid, add 1/2 cup of the pasta water and mix in the spinach.
  9. Combine with pasta and serve.
  10. Add fresh basil, cilantro, grated parm at the table.

Recipe notes

Chicken can be replaced with shrimp, lobster, low slow cooked beef or pork.

Spinach can be replaced with basil and cilantro, kale, napa cabbage, red cabbage, swiss chard, some marijuana leaves

Wine can be replaced with apple juice, or leave it out and use a tomato sauce for a red sauce.
