Mushroom stuffed Bacon Wrapped Pork Tenderloin

Pork tenderloin is very lean, inexpensive and cooks quickly. To enhance this cut and ensure it's moist and flavorful we stuff it with mushrooms and wrap it in bacon. What's better than that?

Main Ingredients

2 Pork tenderloins
8 oz Mushrooms (brown or Portobello are best)
1 small Onion, chopped
1 bunch Parsley (chopped)
10 slices Bacon
Salt & Pepper to taste

Mushroom stuffed Bacon Wrapped Pork Tenderloin Directions

  1. Melt 1 Tbsp butter and  saute the onion over med heat until starting to brown, once brown add second Tbsp of butter and the mushrooms, sprinkle with a little salt. Saute until the mushrooms and onions until the mushrooms release their moisture and dry out again. (5-10 min) Once complete remove to a small bowl to cool for 10-20 min.
  2. Meanwhile preheat your oven to 325 C and place rack in the bottom 1/3 of your oven. Cover a baking sheet with tinfoil and then place wire cooking racks on tinfoil. This will ensure even cooking and browning.
  3. Butterfly your two pork tenderloins and flatten to approx 1/4" (slip into a large ziplock and pound flat)
  4. Stir chopped parsley into cooled mushroom and onion mix, then spread evenly onto the two butterflied pork tenderloins.
  5. Carefully wrap pork around filling, use toothpicks to keep it closed (if necessary) and begin wrapping with bacon. Once both tenderloins are stuffed and wrapped in bacon, place on prepared cooking sheet and place in oven for 20 minutes.
  6. At the 20 minute mark, turn the heat up in your oven to 400 C rotate your and pork and cook for another 10-15 minutes. This should crisp up the bacon. You could use the broiler at this point.
  7. Remove the roasts and let stand for 5 minutes before slicing.

Recipe notes

There are a couple of opportunities to infuse this dish. 

  • Option 1 - Use infused butter/coconut oil to saute your onions and mushrooms
  • Option 2 - Add ABV when adding your mushrooms to the onions

This dish serves 4-5 people depending on the size of your tenderloins, that's a total of 25-30 mg of THC for the recipe. Please dose responsibly.
